12:44 PM On Christmas Eve, I was working till official knock off at work @ 3 p.m. Food treats from my lady boss for lunch and Christmas gifts from my colleagues too. Dearie came to meet me @ at my office and walk towards Liang Court to purchase some ingredients. Prior to that, I went to Kinokuniya & bought a bakery recipe @ only S$4 plus, all about muffins and I intend to bake them when I'm back home =) Out of the menu, I've managed to baked Banana Walnut Chocolate chip muffins wor, yums yums, tast great, like it. Thank God for granting me success in all my bakings thus far. On top of baking,I've made some sushi for dinner, just a few simple sushi for dinner on Christmas eve, thats how I spend my day on Christmas eve with my dearie. Pictures taken below:- ![]() ![]() BANANA MUFFIN WITH CHOCOLATE CHIPS Ingredients:- 150g wholemeal flour 150g all purposed/plain flour 2 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 125g butter 200g sugar 3 large eggs 2 very large ripe bananas, mashed with a fork 60ml milk 180g semi-sweet chocolate chips 100g walnuts, chopped **Makes about 18 muffins, preparation 15 mins, cooking 20 mins. Steps:- 1. Preheat oven to 180 degree. Butter three 6-cup muffin pans. 2. Sift both flours, baking powder, baking soda, and salt into a large bowl. 3. Beat butter and sugar in a large bowl with an electric mixer at medium speed until creamy. 4. Add eggs one at a time, beating until just blended after each addition. 5. With mixer on low, beat in the bananas, followed by the dry ingredients, alternating with the milk. 6. Stir in chocolate chips and walnuts by hand, spoon the batter into prepared pans. 7. Bake until well risen and springy to the touch, about 20 mins. Let cool slightly before turning into a wire rack. *Tips, use toothpick to poke on the muffin, toothpick should come out clean if muffins are fully cooked.
